Jordbær Syltetøj (Strawberry Jam)


Since I can't get "Den Gamle Fabrik" jam here easily, it's not that difficult to do it yourself, although due to the flavor and sweetness of strawberries, it takes some playing around.

  • 1000 g Strawberries
  • 500 g Sugar
  • 1 Vanilla Pod (Scraped)
  • Juice from a lemon
  • 2 tsp Gelatin (flavorless)

    Clean and cut the strawberries. Depending on how you like your preserves I sometimes cut them in half.

    Cooking60 minutes

    Add water, and strawberries to a pot on medium high heat. Sprinkle with HALF of the sugar to bring out the juices.,When it starts to cook, keep stirring and when reduced by a quarter, add as much lemon juice as you like. I prefer more as I think it brightens the flavor, but you might not.,Also pour 1 dl of the juice into a bowl and stir in 2 tbsp gelatin (per quart of total product) and add to refrigerator (or freezer) and wait until completely cold.,Then add back to the simmering jam and stir for a minute.,Taste for sugar and/or lemon juice and store in sterilized jars.
