Classic recipe for 'pepper nuts'. For this recipe I use a bit less white pepper than it calls for, as I found it being a bit too peppery, like a strong after-taste of pepper.

Ingredients

  • 125g Salted butter (room temp)
  • 125 g Sugar
  • 1/2 tsp Ginger
  • 1/2 tsp Cinnamon
  • 1/2 tsp White Pepper
  • 1/2 tsp Cardamom
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 50 ml Heavy Cream
  • 250g Flour (AP)

    Preheat oven to 400F (200C),Cream the butter and sugar in a stand mixer until it's fluffy and white, add the cream.,Mix the dry ingredients and add to SugarButter. Dough will be firm.,Roll the dough into logs about the thickness of your little finger.,Cut 1 cm (1/3 inch) pieces.,Roll or keep as is.,Bake for 7-10 minutes until light brown.,Store in air-tight container.
