Although tomato soup is hardly a Danish invention, I personally find American versions too sweet, so the other night I made a tomato soup from ingredients I already had and it came out pretty good.

Ingredients

  • 28oz can Tomatoes.
  • 1 Large onion, peeled, quartered.
  • 4 tbsp Butter
  • 1 1/2 cup Chicken stock
  • 1 tsp Kosher salt
  • 1/2 tsp Italian Seasoning

    Melt the butter on medium heat, don’t make it sizzle. Add all the ingredients, and let it simmer uncovered for about 35 minutes.,Stir and taste occasionally, add salt if needed.,After 35 minutes, blend the soup. I used an immersion blender but you can use a regular blender too. If you use a regular blender, do it in batches since this is really hot and could easily scald you if there is too much in the blender.,Let it simmer for another 5 minutes and serve with fresh black pepper and maybe a grilled cheese as I had.
