Yields: ~2 cups
Use a Micro plane or fine grater to process the gherkin and cabbage.
Chop the onions and tarragon leaves together.
Mix the mayo with the sugar and mustard. Add the grated gherkins, cabbage, onion and tarragon to the mayo.
Mix together, and leave in the fridge for at least an hour for the flavors to meld.
Taste and add more sugar or mustard for your taste.
If it is too thick, add heavy cream.
